Engine cooling temperature

It's normal. You have had this car during fall and winter when the ICE doesn't warm up to normal temperatures. As the weather warms you will see it warm more often to the mid range indication.

I would recommend getting a ScanGaugeII or other OBD gauge to monitor WT. If you watch the videos on How to get great gas mileage in a FFH they explain your issue with WT. :)

An alternative would be to just enjoy the car, drive it normally, and let it operate the way the Ford engineers designed it.
